Cauliflower Cheese Soup

30g butter
1 onion, diced
4 short rashers bacon (optional)
500g cauliflower, roughly chopped (abt 1 small cauliflower)
2 cups milk
2 cups chicken stock (or veg concentrate TM)
1 cup grated cheese
Salt and pepper to taste
Chives or parsley


Heat butter in large sauce pan, add onion and cook until soft but not brown.
Add milk and chicken stock and bring to the boil.
Add cauliflower, return to the boil, cover and simmer 12-15 minutes, until cauliflower is tender.
Cool mixture to lukewarm then blend until smooth with stick mixer.
Add cheese, salt and pepper and heat without boiling.
Serve soup topped with chive or parsley.

Process onion and bacon 3 sec speed 7.
Add butter and sauté 3-4 mins, varoma speed 1.
Add 500g cauliflower (no more),2 cups stock, 1/2 cups milk, pepper and salt.
Cook 15 mins, 100°C speed 1.
Add grated cheese and 1/2 cup cream toward end of above cook time.
When cooked, blend til smooth approx 1 minute, speed 7 gradually increasing from 1 to 7.
Garnish with chive or parsley; or croutons.


Do not boil soup after adding cream.
